Why your pour-over tastes bitter.

Bitterness gets blamed on the beans more than anything else, and the beans are usually innocent. Bitter almost always means over-extracted — you pulled too much out of the grounds. Three things cause that, all of them free to correct, and they are worth working through before you change anything you are buying.

One: the water is too hot

Water straight off a rolling boil is around 212°F, and that is hot enough to strip the harsh, astringent compounds out of the grounds along with everything you actually want. Coffee wants roughly 195–205°F.

You do not need a thermometer to fix this. Take the kettle off the boil and wait about thirty seconds before you start pouring. That one change fixes more bitter cups than any piece of equipment on this page.

Two: the grind is too fine

Finer grounds have more surface area, so water pulls more out of them, and it pulls the bitter compounds last. A pour-over ground as fine as espresso will always taste harsh, and it will also brew slowly, which compounds the problem by extending contact time.

Use the brew time as your gauge rather than the look of the grind. A pour-over should finish draining in roughly three and a half to four and a half minutes. Much slower and the grind is too fine; much faster and it will taste thin and sour instead, which is the opposite problem.

Three: the pour is channelling

If you dump water in one spot, it carves a path through the bed and runs straight down it. Grounds in that channel get hammered and turn bitter; grounds outside it barely get touched and stay sour. One cup, both faults at once, which is why the result tastes muddled rather than simply strong.

Wet the grounds first and let them bloom for about forty-five seconds — fresh coffee releases carbon dioxide, and that gas pushes water away until it has escaped. Then pour in slow circles from the centre out, keeping the bed level. Free, and it is the difference most people notice fastest.

What the brewer itself is responsible for

Once those three are right, what is left is the filter. This is the part of pour-over that genuinely is equipment, and it is where brewers actually differ from one another.

The pick: a Chemex, if the cup you want is a clean one.

The Chemex Classic Series 8-cup is the brewer built around that filter idea and has been since the 1940s. Its bonded filters are markedly thicker than a standard cone paper — that is the entire design argument — and they produce a cup with very little oil and almost no sediment. If what you dislike about your coffee is heaviness and a lingering bitter finish, this is the brewer aimed squarely at that complaint. It is also one piece of glass with no plastic in the brew path, and it doubles as the carafe, so it goes to the table as it is.

Four honest limits, and the first is the one people trip on. The thick filter is the whole point and also a running cost. It needs Chemex-bonded filters or something equally heavy; a standard supermarket cone filter is thinner and gives you a different, less clean cup, which quietly defeats the reason you bought it. It needs a coarser grind and it brews slower than a cone brewer — expect four to five minutes, and expect to adjust if you are coming from another brewer. It is glass. It breaks, it has no handle beyond the wood collar, and the collar comes off before washing. And “8-cup” means Chemex cups, which are five ounces — realistically about four large mugs, not eight.

And the honest counter-case: if you like a heavier, oilier cup with more body, the Chemex is the wrong brewer and will taste thin to you. Clean is a preference, not an upgrade. Fix the water temperature and the grind first — if that alone solves it, you have saved the money.
